Delicious Dishes: Colorful Noon Paneer
Don't be put off by its exotic name. This recipe for persian Noon Paneer is really as easy as assembling some ingredients into lightly-toasted pita bread, and its super savory and satisfying!
Noon Paneer literally means "bread and cheese" (pita bread and feta cheese in this instance), which are really the only required ingredients. Everything else is optional, and you can pick and choose which ingredients sound good to you. Or do what I do: just throw everything on a serving platter and let each diner assemble their Noon Paneer the way they like it!
Rich feta. Tart pickles and olives. Sweet dried cranberries and apricots. Refreshing tomatoes and cucumbers. What more does a girl need?
Ingredients:
- pita bread
- feta cheese
- tomatoes
- cucumbers
- pickles
- olives (kalamata, manzanilla, ect)
- nuts (walnuts, almonds, ect)
- dried fruits (cranberries, apricots)
Preparation:
- Wash the tomatoes and cucumbers and chop into bite-size pieces
- Chop up the pickles too, and crumble the feta a bit
- Lightly toast the pita bread and cut in half
- Arrange all the ingredients prettily on a cute serving tray, and let each hungry guest make their own Noon Paneer. Simple!
